Forest fruit slice
A light cream layer on a sponge base, topped with fruit jelly, whole blueberries and raspberries. One of the most popular items in the display.
It has three layers: a thin sponge at the bottom, a light vanilla cream on it, and fruit jelly on top with whole berries in it. The jelly is not only decoration – it protects the cream from drying out, which is why this slice is the same at the end of the day as it was in the morning.
The fruit depends on the season: raspberry and strawberry in early summer, then blueberry, blackberry and redcurrant. In autumn we make a plum version. That is why it is a seasonal item: forest fruit available in winter is either frozen or expensive, and both show.
Why we recommend it
- It is light – it does not weigh you down even after a meal.
- Acidic and creamy at the same time, so it does not seem too sweet.
- It slices well, which makes it a good choice for a larger tray.
We prepare larger trays with two to three days’ notice.
