Fruit cream slice
A pink fruit cream on a red sponge base, with piped cream decoration and dried fruit shavings on top.
This slice starts with its colour: the base is red sponge and the cream takes its pink from fruit purée. Neither of them gets that colour from artificial colouring – we tend to point this out because many people ask.
The cream is made from raspberry or strawberry, whichever is better at the time. Piped strips of cream go on top, and on those dried fruit shavings, which give a crisp contrast to the soft cream.
When it is available
Seasonal. From early summer to early autumn, while there is fresh raspberry and strawberry. We do not make it outside that, because frozen fruit worked into cream turns watery, and that ruins the texture of the slice.
Ingredients
Egg, sugar, wheat flour, cream, butter, raspberry or strawberry, vanilla, dried fruit.
